Pongal (Spiced) Rice Recipe

Get ready to celebrate Pongal (South Indian Thanksgiving) the right way with Spicy Pongal Rice:

INGREDIENTS
 

INSTRUCTIONS
 

INSTANT POT METHOD:

  • Press SAUTE mode(Normal) on Instant Pot. Add ghee or oil to the pot.
    Note: Tastes better with Ghee
    add ghee to instant pot insert
  • Once POT is hot, Add in the cumin, crushed black pepper, and cashew nuts. Saute for 30 secs or till cashew nuts turn light brown in color.
    add cumin ,pepper and cashew and saute
  • Add the chopped green chilies, ginger, curry leaves, and asafoetida. Saute for another 30 secs.
    add ginger ,green chillies and saute for few minutes
  • Next, add the rinsed dal and rice. Saute well 1-2 minutes till dal turns light brown or till aromatic.
  • Add water, salt. Mix well.

  • Close the lid on the pot. Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set the timer to 8 minutes.
  • Once the pot beeps, Wait for the pot to naturally depressurize.
  • Open the lid and mix Pongal well.
    Note: If rice is not mushy then select saute mode and add 1 cup of water and cook for 1-2 minutes or till mixture boils.
  • Pongal is ready, serve with yogurt, raita, or tamarind chutney.

INDIAN PRESSURE COOKER METHOD:

  • Heat 1 teaspoon ghee in a pressure cooker and add the washed dal, Saute well 1-2 minutes till dal turns light brown or till aromatic. Then add rice.
  • Add 4 cups of water, mix well.
  • Close the lid and put the whistle weight on. Cook for 3-4 whistles on medium flame and turn off the gas.
  • Once the pressure has released, open the lid and Mix the mixture well.
  • Meanwhile in a pan add the remaining ghee, once it's hot add cumin, black pepper, cashew nuts. Saute for 30 secs or till cashew nuts turn light brown in color.
  • Add the chopped green chilies, ginger, curry leaves, and asafetida. Saute for another 30 secs.
  • Add this tempering into the cooked moong dal rice mixture and boil.
    Note: If rice is not mushy then add 1 cup of water and adjust consistency.
  • Pongal is ready, serve with chutney, sambar, raita, or tamarind chutney.

NOTES

I have prepared this dish in my electric pressure cooker, Instant Pot DUO60 6 QT 

Tips

  • Pongal tastes best when made fresh and eaten hot.
  • Using small grain rice such as sona masuri or Seeraga Samba rice is preferred to make traditional Pongal.
  • Pongal thickens a little on cooling. You can save leftovers in the refrigerator and reheat in a microwave or on a stovetop (add hot water if required to adjust consistency) just before serving.

Variations

  • Ratio of dal to rice is a personal preference.I have used equal amounts of dal and rice to include more protein into the diet. But you can reduce the dal as well.
  • You can also add some vegetables like carrots, peas, spinach to make this Pongal healthy.
  • Adding ghee enriches the taste of pongal but Vegans can skip ghee/clarified butter and replace with any cooking oil.
  • You can also use husked split moong dal, makes this moong dal khichdi more healthy.
  • Use the same recipe to make healthy pongal recipe with millets, quinoa, rava, oats.

Remote Work Makes The Dream Work


I always thought that I was one of those people that didn't like work regardless of what I did. I'd wake up 2 hours before work started, styled my hair, did my makeup, put on my dress/slacks/shoes, and would race toward the door to catch the subway. I'd sprint up the subway station steps and would be completely out of breath when I got to the top. The subway would arrive at the station, usually late, and everyone would passive-aggressively move their way to the front of the platform. The doors slam open and everyone starts pushing and shoving and I would cram myself in the sardine can we call a train car. I'd arrive in Manhattan, face pressed against the glass door, being pushed out of the train car and everyone would swarm the station like bees scurrying to their jobs. I'd get to work already exhausted just from the commute, get a cup of tea, finally have my breakfast, and would already need a nap. This is not how life is supposed to be and thankfully it's not my life anymore!

Now I wake up at 8:30AM, put on my workout clothes, make my tea, and put it on my warmer so it stays hot, pour myself some water, brush my teeth and hair and I'm ready for the day. I don't need to pay for expensive Manhattan lunches or open a squished homemade sandwich; I make my amazing gourmet meals right at home. I don't have to pay $127/month for an MTA subway card. Not only that, but I get more done because I don't need the breaks that I usually would in an office because I'm already home! 

Why are we still commuting and doing this to ourselves? People who are in the medical field or have hands-on jobs obviously need to be present and in their places of work, but the rest of us don't need to be. It's an expense not only for us but for companies to keep the office spaces running. I hope this pandemic will change the way companies think and move more positions to be remote because honestly, I'm living my best life.

Too Cluckin' Delicious Not to Share

Thanksgiving is always a feast that lasts for at least a week in my house thanks to all the leftovers. This year, I whipped up a new Thanksgiving soup that is too cluckin' delicious not to share. 

Keep in mind, the whole turkey was about 4 servings. I also used food in my house that I needed to use/rid of. Feel free to add other veggies, legumes, etc. 




First, make the turkey broth:

Place the turkey carcass in a large pot & pour in 16 cups (128 oz) of water; bring to a boil, reduce heat to a simmer, & cook the turkey carcass for 1 hour until the remaining meat falls off the bone. Remove the turkey carcass & pick off/chop any remaining turkey & set the meat aside. 

Use a fine colander to strain the broth into a clean soup pot. You will have A LOT of broth. For 4 servings of soup, you'll only need 32 oz of broth. Put the remaining broth in a ziplock bag & store it in the freezer until you're ready to use the rest.

To make the soup:

Add the chopped turkey to the strained broth; bring to a boil, reduce heat to a simmer. Stir in 1 cup of spinach, 1 can of chickpeas, 1 large carrot, 1 onion (I prefer red), 1 can of tomatoes, 1 tbsp. parsley, 1 tbsp. basil, 1 tbsp. black pepper, ½ tsp. paprika, & 1 tbsp. thyme. I added a tsp. of garam masala as well, but this isn't necessary. Simmer for 1 more hour.

Lastly, add 1.5 cups of oat or almond milk ( I used oat) & stir it in on a low flame. Add cayenne pepper to taste (I used ¾ tbsp., but I like my food spicy.)

How to get your Tax Back from Ireland if you're a Non-EU Citizen

 If you're looking to get some money back after having a great time in Ireland, you've come to the right blog post. 

Here are some things to keep in mind:

  • VAT is already added to the price of goods you see in stores in Ireland; it is not added afterward at the register, unlike sales taxes in the USA.
  • VAT is only refunded for the purchase of goods, not services, so you cannot claim back any VAT you paid for accommodation, entrance charges, meals, guides, car hire, etc.
  • Some goods in Ireland are sold free of VAT, for example, children’s clothing and footwear, books, and food (excluding things like chocolates or other confectionery).
    Since you pay no VAT when purchasing these, you obviously cannot claim any money back.
  • There are only refund desks in Dublin, Cork, and Shannon Airports, so if you leave at another airport or by sea, it is more difficult to claim a refund.
  • There is no minimum or maximum amount you can claim.
People have a hard time finding the VAT/Fexco office in Dublin. Go toward Gates 336-426. Check out the photos below for reference:

How could I forget about Amsterdam?

I was going through my Facebook photos of all the places I've been & stumbled upon my Amsterdam album. I then went to my blog to see what I had to say about Amsterdam & was astounded to find that I hadn't written a blog post - Shame on me! So here we go...

I flew into Amsterdam & met my mom for her 60th birthday & it was time to explore.

We found our houseboat on Prinsengracht (meaning the Prince of Orange), which has the same house number as the actual home next to it indicating that they're owned together. It was clean & spacious & had a little deck literally on the water so we could watch the boats pass & wave at people.


If you're a foodie like me, I highly recommend doing a food tour anywhere you go. My mom & I took the Hungry Birds food tour & it was awesome! On food tours, everyone is happy & open to new experiences. It's a great way to make new friends while traveling.

Some places I couldn't tell you if it was on the tour or if my mom & I found on our own, but here is a list of tasty places to check out:

Van Stapele Bakery
Croquettes at Van Dobben
Kaashuis TROMP Cheeseshop 
The Pancake Bakery (right across from our houseboat on Prinsengracht.)
The Happy Pig Bakery
Koepelcafé - you'd think this was touristy food & it would be meh, but this was by far the best food we ate in Amsterdam. Get the Stamppot; you won't be disappointed.


Grand Cafe de Kroonprins - this was where we ate for lunch on the tour.
Cafe Hoppe - good for food & drinks.
Cafe Bouwman - according to reviews, the service here is terrible, but we were on the food tour & didn't experience this.
Amsterdam Cheese Museum


Kartika - authentic Indonesian restaurant. We went here with a woman we met on the food tour. The food was awesome!



We did wander through the different districts & saw some interesting people, but the food was definitely our main focus - no weed or prostitutes for Mom's 60th birthday.

Amsterdam is beautiful and friendly & I would definitely go back. If you ever go, let me know if you try any of the places I went to. Also, watch out for the bikers! They do not abide by traffic laws & there are hundreds of them!

Let's Stay Healthy!

Hi Ariel Viewers!

I hope you all are safe during these COVID-19 times. I'm thankful to have some money coming in with Jason's job & teaching a 5-year-old neighbor from my NYC 1-bedroom apartment.

This time has given me some time to reflect on literally everything. So far, I've been working out about 3 times a week & wearing ankle weights pretty much every day since lockdown. So far I've lost 7 lbs & I'm feeling good! I've also been practicing Spanish with a tutor through italki once a week. If you want to learn a new language, I highly recommend italki.


After realizing how productive & content I am at home, I've come to the conclusion that I only want to work remotely. That is why my Instagram has boomed with new content & I've hired a resume writer to target remote recruiters.

I'm on a mission to gain a bigger following, post engaging content & promote amazing products. In addition, I'd love to get a remote admin/executive assistant position so I can make a living, do what I love, & do what I'm good at.

In the past 5 years, I've really cut back on traveling & have been stagnant in New York. I want to change that!

Where should Jason & I travel to next? Where should we live? New York is no longer New & its time for a change.

2020 is certainly a year for change throughout the entire world - good & bad. My goal is to get a new & freer path so I can explore while still staying safe.

We finally made it to Colorado!

Hello Ariel Viewers! It's been a bit since I've traveled & am ready to start exploring other US States (& hopefully we'll be moving to another state in the next 2 years!) Jason & I finally had our first vacation on our own & it was fantastic! We traveled through Colorado seeing Aurora, Denver, Boulder, Littleton, & many towns in between.

The first couple of nights, we stayed at Aloft Hotel, which was right in Downtown Denver. I was exhausted from our 5 AM flight from Phoenix to Denver & was already crabby. Then we found out parking was not free & after paying for self-parking, we were told valet would have been easier & cheaper. Heidi, the front desk woman at the hotel obviously sensed my frustration & sent up a gift bag to our room filled with rosé, other goodies, & a note apologizing & saying our parking cost was comped for our entire stay. I was very pleased with Heidi's customer service & definitely recommend Aloft if you want a great Downtown Denver experience. Just keep in mind that if you have a car, valet is cheapest.

Here are a few places we went to in downtown Denver:

  • Tupelo Honey - Southern Restaurant - great food & service.
  • Little India - TERRIBLE service. Great samosas, but I don't think I'd go back.
  • Chriskindl Christmas Market - adorable little market with lots of homemade food & products.


Littleton was the most adorable town ever. It was all lit up in Christmas lights & Main Street was full of small businesses & some amazing food. For instance, McKinners Pizza has delicious pizza & iN-TEA is a cute little cafe with a huge variety of teas.

Below is a rundown of cities/towns we went to & the places we went in those areas:

Aurora

  • Black Bear Diner had great service & good food but seemed a bit like a chain restaurant.

We did not like Aurora in general. There was no downtown or center of town. There were also a lot of big-box stores.

Boulder

  • Bohemian Beer Garden - Croquettes & gluhwein were awesome! Great vibe for going out with friends or on a date.
  • Speakeasy - License No. 1
  • Village Coffee Shop
  • Bramble & Hare - BEST DRINKS EVER!
  • Lark Burger - fast-food burger joint with killer burgers. SO GOOD.
  • Elements massage with Jodi & Natalie
  • Chautauqua Dining Hall - restaurant in the mountains with great food & service.
  • Radi8 - Epsom salt float tank. Call them & ask for the Groupon price. 

Foothills Tour Through the Mountains

  • Little Bear Saloon & Restaurant in Evergreen - Try Little Bear Coors. I don't like beer, but that was very good.
  • Muddy Bucks - Massive & delicious Cinnamon Roll & Cider
  • Red Rocks
  • Buffalo Bills Grave at Lookout Mountain

Other Notes About Towns We Visited
We didn't like Niwot.
Longmont was nice. We ate at the Roost & coffee at La Vita Bella (Bar & Cafe)
Lafayette (we liked it)
Louisville (Huckleberry Cafe)
Superior (not so superior)

Lastly, Urban Village Eat & Sip in Lone Tree deserves its own paragraph. When I say this is the best Indian food I've ever had (& I'm Indian, so I'd know!), I'm not kidding. We did the Chef's Tasting Menu & I couldn't believe the quality (& quantity!) of food. Every dish was better than the next. The staff's service was on point, & the decor & atmosphere were very warm & inviting. I will 1000% go back when I visit Colorado again.

Overall, our 5-day Denver trip was very eventful, delicious, & a success.
